Chocolate Chip Cookie Pie 


This is one of my most favorite things to make. I just love when healthy ingredients come dressed as indulgent desserts. That and I am totally chocolate chip cookie dough obsessed. This recipe is vegan, gluten free and packed with plant protein. Most of the ingredients you can usually find in your house!

Ingredients
2 400ml cans of chickpeas
1 cup almond butter 
2/3 cup maple syrup 
1.5 tbsp pure vanilla 
1/2 tsp baking powder 
1/2 tsp baking soda 
1.5 tsp sea salt 
1/2 cup+ chocolate chips 

1)  Preheat oven to 350, strain chickpeas over a bowl. The liquid in a can of chickpeas is called aquafaba. If you save it and put it in the fridge, you use it for many things including a recipe I will be posting on Sunday 🙊


2) Put all ingredients except for chocolate chips into a food processor. 


3) Process until very smooth. 
4)Fold  in chocolate chips and pour into a greased pan. Top with more chocolate chips

5) Place in the oven and bake for approximately 35 min. A toothpick put in the center should come out clean. 
6) Let it cool in the fridge. I like it best left overnight in the fridge and had the next day but I always have a couple pieces before I put it in there. 


Macros for the whole pie: 93p, 175f, 400c 
Cut into 8 big slices : 12p, 22f, 50c per slice
