Black Bean Brownies
I love eating. I love eating delicious, secretly healthy things. You know what I love the most? Eating delicious, secretly healthy things in the middle of nowhere, on top of a mountain on a sunny day! Wherever your adventures take you , these fibre and protein packed brownies will keep you full and energized and if you can save them till then, are a great motivator to get to the top!
I decided to use Carob chips instead of chocolate chips this time. I randomly discovered them at a vegan supply truck and thought they were dairy free chocolate chips. They are dairy free, and while having a very similar taste to a sweet dark chocolate, they are actually made from roasted and crushed husks, taken from seed pods of a Carob tree. An ounce of Carob chips has the same calories as an ounce of chocolate but has about 2g less sugar. Because they are naturally sweet, the unsweetened version of these chips is actually much sweeter than chocolate , while still having less sugar. I was skeptical at first I'll admit, but they really DO taste chocolately and are quite delicious!! I definitely suggest giving them a try, but regular non dairy chips will do just fine in this recipe as well.
Ingredients
1.5 cups rinsed canned black beans
3 tbsp cocoa powder
1/2 cup oat flour
1/4 tsp salt
6 tbsp raw cane sugar
1/4 cup vegetable oil
2tsp pure vanilla extract
1/2 tsp baking powder
2/3 cup Carob chips
Additional chips for top
1) preheat oven to 350 degrees. Combine all the ingredients into the food processor and blend until completely smooth.
2) Stir the chips in and pour into a greased pan.
3) sprinkle the top with additional chips if desired.
4) Bake for 20 minutes. Take them out of the oven and let sit for 20 mins.
I prefer to make them the night before and let them cool overnight so they firm up but this is totally up to you. Feel free to sub the oat flour with regular flour, or cane sugar for maple syrup depending on what you have around :)
Macros : 66f 180c 35p for the entire recipe , divide by amount of brownies you cut.
