Strawberries & ( coconut ) Cream French Toast
Weekend mornings are for brunch , and French toast has always been super popular around our house. When I discovered the magic of Aquafaba and that it could be used to make a vegan version , I was excited and I'll admit, a little hesitant. If you didn't already know, Aquafaba is the liquid left over in a can of chickpeas. I know, weird right? But I promise you that this recipe tastes anything but "beany" and will have you saving ALL the chickpea water you have. Add a little bit ( a lot) of Coconut whip and strawberries and its nothing but creamy , sweet perfection in your mouth.
Ingredients
1 cans worth of Aquafaba
1/4 cup cashew milk
2 tsp cinnamon
6 pieces of bread
Strawberries
1tsp pure vanilla
Coconut whip
1 can of coconut milk refrigerated overnight
2 tsp pure vanilla
1) Take your aquafaba and put it in blender. Blend for a few seconds until frothy.
2) Place frothy aquafaba into a large bowl with cashew milk, vanilla , and cinnamon. Slice up desired amount of strawberries.
3) Dip bread very quickly in the mixture on both sides ( do not leave bread to soak as this will result in soggy French toast) and grill on both sides until crispy.
4) As your bread is grilling, it's time to prepare the coconut whip. Remove the can of coconut milk from the fridge. When you open it you will notice that it has separated into 2 parts. The part you want
is the thicker creamier stuff on top. Scoop only the top part into a mixing bowl.
5) Add the vanilla to the bowl and whip on high speed until little peaks form. That's it!!
6) Arrange grilled bread, strawberries and coconut whip together in desired fashion and enjoy!!
( Pro tip: if you have left over coconut whip save it for your coffees, pies, cakes, really anything that you use regular whip for!
