Raw Salted Caramels
This is probably the easiest recipe I will ever post here. Virtually 2 ingredients and you have yourself some delicious, kid friendly vegan salted caramels. I enjoy them best when they've been in the freezer for a couple of hours but they are very easily transportable and make the perfect quick snack when you need some energy on a hike. I've been trying out recipes I can make in bulk and have on hand for Carter as a snack that are easy, enjoyable and healthy, and these fit the bill! Whether you are on a beach or mountain top , these babies are as addictive as they are easy to make , so be sure to bring plenty!
Ingredients
2 cups pitted dates
2 cups raw cashews
3 tsp vanilla (optional)
3 tbsp water
Sea salt
1) Add cashews, dates and vanilla into a food processor. Process for a few minutes until they are ground pretty well and mixed.
2) Depending on the softness of the dates, at this point you want to add in 1-3 tbsp of water. You want the mixture wet/sticky enough that it sticks together easily in your hands.
3) Use a teaspoon ( or tablespoon if you want bigger balls ) and scoop some of the mixture into your hands. Roll it into a ball and place onto a foil lined plate.
4) Sprinkle the balls with sea salt and place into the freezer for a couple of hours to set. Enjoy!!
Recipe makes approximately 24 salted caramels.
