Carrot Apple Walnut Bread




Carter has been absolutely ravenous lately. He must be going through a growth spurt because all he wants is food , and lots of it. I've been trying to make an effort to have more things that are ready to snack on in the house for in between meals but still loaded with nutrients, and not too time consuming to make. Enter the Carrot, Apple, Walnut Bread! This vegan Carrot cake-like bread was such a hit with the whole family and I felt so good serving it day after day because of the ingredients!

The Coconut oil and yogurt give it a healthy dose of fats - which when combined with the fresh carrots and apples keep the bread nice and moist! I decided to use spelt flour in this recipe after doing some research. Spelt flour tends to be easier to digest than wheat flour because it contains more soluble fibre, as well as a higher amount of certain minerals such as copper, iron, zinc magnesium and phosphorus. It is also high in niacin or vitamin B3 which has a whole range of benefits including improving circulation and reducing cholesterol levels. 


Ingredients

Extra Thick Flax Egg
( 1.5 tbsp ground flax, 3 tbsp water)
3/4 cup Raw Cane sugar
1/3 cup melted Coconut Oil
1/4 cup unsweetened Coconut yogurt
2 tsp Vanilla
2 tsp Cinnamon
1/2 tsp Nutmeg
1 cup Spelt Flour
1/2 tsp Baking powder
1/2 tsp Baking soda
1/2 tsp Pink Salt 
3/4 cup grated carrot 
3/4 cup grated apple 
1/4 cup crushed walnuts 

1) Preheat oven to 350F. Grease a shallow pan and lightly sprinkle flour on top. A deeper pan will produce a taller loaf but bake times will vary and consistency can't be guaranteed.

2) Combine the ground flax and water in a small bowl to make a flax egg. Peel and grate the carrot and apple, set aside.

 

3) In a large bowl or kitchen aid , combine all of the ingredients from the flax egg to the nutmeg. Whisk until they are well combined.


4) Add in the flour, baking soda, baking powder and salt. Gently mix together until just combined. 


5) Add in the apple, carrots and walnuts, mixing gently. The batter should be very thick. Place the batter into the pan and smooth the top with a spatula. 


6) Bake in the oven for approx 48 minutes. Baking times will vary depending on the pan and oven used. Keep an eye out in the last 5 minutes. Check to make sure that the top is golden , a toothpick put into the centre of the bread should come out clean. Let the bread sit for 10 mins before enjoying! We love ours with some melted vegan butter and some pink sea salt sprinkled on top.
