Apple Pie Chia Jam
I'm constantly on the hunt for healthy & tasty recipes that are also toddler friendly and thats exactly what you get with this super easy, refined sugar free jam !
Carter has been eating this stuff on its own by the bowl full but it is also perfect for topping onto yogurt , granola or oats, spread on toast or my personal fav, in between and all around fluffy pancakes! Apples themselves are chock full of vitamins and minerals but the nutrient powerhouses in this recipe are the chia seeds! They are full of antioxidants, as well as a source of fibre, iron and calcium. My favourite thing about them, is that they are such a great source of plant based omega 3 fatty acids which are such an important part of your diet- especially for those little ones still developing their brains!
Ingredients
5 small apples
2.5 tbsp chia seeds
3/4 cup water
1 tsp vanilla
1 tsp cinnamon
.5 tsp nutmeg
.5 tsp salt
1. Peel , core and dice apples.
2. Place all ingredients into a pot, stir and mix well. Bring to a boil on medium heat.
3. Turn the heat down to low, simmer for 15-20 min stirring often.
4. Remove from heat once the apples have softened. Mash the mixture well with a potato masher and let sit for 10-15 min before serving. ( feel free to leave some of the mixture un mashed for a chunkier jam) This will allow it to thicken. If you are patient enough to leave it overnight, it allows the flavours to really come out.
